Chicken curry
Ingredient list:
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 1 garlic clove, chopped
- ½ tsp salt
- 2 tsp curry powder
- 1 cup unsweetened coconut milk
- 1 can diced tomatoes, drained
- 1.2kg chicken breast cubed
- 3 cups fresh baby spinach
- 2 cups hot cooked rice
Method:
- In a large skillet, heat vegetable oil over medium heat.
- Add onion, garlic and salt; cook, stirring until softened 7 minutes.
- Add curry powder and cook, stirring for 1 minute.
- Stir in coconut milk, tomatoes and tomato paste; cook, stirring occasionally until thickened for 10 minutes.
- Add chicken and simmer until cooked through; 6 minutes.
- Turn off heat, add the spinach and stir until wilted, 1 minute.
- Serve over hot rice.

Idyllic Bay Regional Council covers 3255 square kilometres with rural townships, beautiful coastal regions and thriving progressive business precincts. Council services the varying needs of more than 450 000 residents with a dedicated and committed team of 1700 employees.
What will you do?
Your day will see you taking inbound calls from the community where you will spend time engaging and getting to understand their needs. Some of these calls will involve updating personal information, providing complex information, advising about upcoming events, bookings and taking payments. At times this position is emotive and would suit those that can separate this to allow the best resolution for the customer despite the circumstances at hand.
When will I do it?
- You will enjoy a Monday to Friday rotating roster between the hours of 8.00am and 5.30pm.
- No weekend work is required.
- These positions are in a temporary capacity for a 13 month Assignment.
- You will enjoy an hourly rate of $26.24 + 9.50% super.
